Spanish Taco with Shiitake Mushrooms in Romesco Sauce
The first shiitakes of the season from Zaino Farm are sautéed with black beans, then coated in a savory romesco sauce originating in Spain that is made with roasted tomato and red pepper, walnuts, olive oil, paprika and garlic. Our tacos come with roasted corn and a crunchy lime pickle slaw with kohlrabi, dill pickles, green pepper and red onions, and a side of sour cream.
