Shiitake, Butternut Squash, White Beans and Kale with Romano Polenta
Fresh and flavorful shiitake mushrooms from Zaino Farm are tossed with sautéed kale, great northern white beans, bright butternut squash, and green scallion pieces with fresh chopped sage and olive oil, then served over a creamy base of polenta, stirred with pecorino romano cheese and black pepper. It is a vegetarian taste of Italy this week!
