Shawarama Spiced Seitan and Eggplant with Turmeric Rice
Thick sliced eggplant and seitan* are brined overnight in a marinade styled after a Turkish kebab, with lemon, garlic, fresh thyme and oregano and a heady spice blend, then roasted and served over a bed of yellow turmeric rice with onions and parsley.
*Seitan is a soy product, mixed with whole wheat flour and has a much firmer texture than tofu. It is a little more similar to meat, but is hard to describe. I just wanted to branch out and explore more vegetarian options. This one's a winner!
