Sesame Noodle Salad with Mandarin and Thai Basil
Almost a whole meal in itself, we start with Japanese noodles chilled in sesame oil, then tossed with shaved carrot, mushrooms, fresh spring asparagus, crisp red radish and chopped scallions, then dressed in a light Thai basil and mandarin sauce. Great for lunch or light dinner!
