Ropa Vieja (Cuban Beef) with Wild Rice
This is a classic Cuban dish, full of bright Latin flavors. We braise beef brisket with celery, onion, tomato, peppers and a full complement of herbs and spices until the beef is perfectly pull-apart tender, then use the braising liquid to cook the rice, infusing the rice with all the same fun flavors as the beef and finished with some grated parmesan and fresh coriander leaves. Served with a side of pickled kale and apple slaw.
