Ratatouille with White Cheddar Cornbread and New Potatoes
Traditional ratatouille made from tomato, onion, pepper, eggplant, and summer squash is stewed with fresh herbs, white wine, garlic, and Mediterranean spices and served with seasoned new potatoes. This is a favorite summer dinner at our house and it comes with a generous slice of house-made green chili and white cheddar cornbread.
