Mediterranean Lentil Salad
French green lentils are tossed with a medley of roasted eggplant, fresh kohlrabi, dried apricot chunks, red pepper, chopped parsley, thyme, red onion in an orange zest balsamic vinaigrette. It is a fantastic mix of flavors that come together to make a bright yet filling salad.
