Marinated Mushroom Vegetable Salad
Zucchini, squash, eggplant and baby bella mushrooms are marinated in a tangy Italian-style vinaigrette and roasted until tender. Then we chill the roasted vegetables and toss them with fresh mozzarella and chopped cherry tomatoes all over a bed of fresh baby spinach. Bright and delicious!
