Kerala Spiced Cauliflower, Paneer and Rice
This is a hearty dinner starting with cauliflower florets and thick sliced paneer (mild Indian cheese) marinated overnight in South Indian spices, yogurt, garam masala, bay leaves, garlic, cinnamon and cardamom. Then they are simmered until just perfectly tender with ghee, onions, tomatoes, peppers, green beans and peas, served in a light sauce over jasmine rice.
