Panzanella Salad with Golden Beets, Apple, Cucumber, and Herb Honey Vinaigrette
Italian panzanella style summer bread salad with a twist to turn it into a Pennsylvania style bread salad. We use crusty bread chunks with cold roasted golden beets, honey crisp apples from Way Fruit Farm, cool cucumber pieces, and slices of red onion and scallions with a side of herb vinaigrette sweetened with a touch of honey.
