Chicken and Chorizo Pozole
Common in Latin America and the Southwest, Pozole (or hominy) is corn soaked until the outer shell loosens, then dried and either ground into flour, or in this case used as the base for a delicious stew. We slow cook chicken in coriander and cumin braising broth with pozole, chorizo, onions and sweet green pepper with spices and finished with fresh cilantro. It is a rich and earthy soup, perfect for a full meal by itself.
