Basil Lemon Chicken Salad
Whole roasted chicken breasts are chopped and combined with cucumber, red and orange peppers, and celery coated in a creamy blended yogurt sauce featuring loads of basil, lemon and a bit of garlic. We top off the salad with a little chopped scallion and toasted almonds for a little extra crunch. Served with a large romaine leaf and pita points, this makes a beautiful packed lunch or light dinner.
