Barley Salad with Zucchini, Asiago, and Lemongrass
Barley grains are cooked until just nutty and tender and tossed with grated asiago, sautéed zucchini, mushrooms and artichoke hearts. This is all combined with a parsley, scallion, and lemongrass dressing for a light bright flavor and a great lunch salad.
