Aloo Gobi with Wild Rice Pilaf
Aloo Gobi is a popular Indian curry made with potato and cauliflower. We toast our curry spices, garlic, onion, coriander, cardamom and turmeric then add a little onion before mixing in the potatoes, cauliflower and eggplant. Served over wild rice pilaf with spring onions and orange zest, this is a vegetarian dinner with a wonderful depth of flavor.
