Adobo Chicken with Rice
This dinner is a Filipino inspired chicken dish with a tangy marinade made with tomato, onion, thyme, garlic, chili, coconut, ginger, cardamom, cumin and more. The chicken is cooked over high heat to make it crispy on the outside, and tender and juicy on the inside. It is an incredibly aromatic dish, served over rice with extra sauce and crunchy sugar snap peas and broccoli florets.
